Cinnamon Banana Bread Muffins!!!

I have to share this incredible recipe with you.  These muffins seemed to melt in my mouth after pulling them out of the oven.  Spread a little butter over these when warm and you can enjoy a little slice of heaven.  Epicurilicious!!!!

Here is the recipe, so you can enjoy these delicious breakfast treats.....

Cinnamon Banana Bread Muffins

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup canola oil
  • 1 cup walnuts (optional)
  • 3/4 teaspoon vanilla (optional)
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter 

 

1. Preheat to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and oil (vanilla and walnuts if desired). Stir banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until it is a streusel consistency. Sprinkle topping over muffins. 4. Bake in preheated oven for 18 to 20 minutes.

I enjoy adding a touch of class to a muffin. Most people love the top of muffins. Its the best way to start a friends day!
I added a touch of orange olive oil to the batter instead of the regular oil. Gave another flavor.

I LOVED the recipe! So, did everyone else that ate one! I didn't do the topping right, so it was mixed too much, so I just globbed it on the top and then sprinkled cinnamon sugar on top and it was GREAT!!! Thanks!

Cooked at 375 for 25 minutes
Added vanilla and 1 cup raisins
Used vegetable oil

Best muffins I've ever made.

Loved it...I cut the oil to a 1/4 and added a 1/3 cup granny-smith applesauce...I also added 2Tbs dried unsweetened coconut (organic) in the streusel mix...delicious!!! (I did no-walnuts and added a tad more vanilla too!) =)

I've made these muffins several times now and they are amazing-- I love them fresh out of the oven. Question, though--would the batter hold up if I made it the night before and refrigerated overnight to make muffins in the morning?

Muffin Lover,

Glad you like those muffins. I think the world of them too! Here is my suggestion for you. Go ahead and measure the dry ingredients out and make the streusel mixture the night before. The next morning stir the readied banana mixture into the dry ingredients when you wake up. I think this will work best for ya! It may not be AS easy as you had imagined by throwing the batter in the fridge, but I think it will produce a better muffin. Let me know!

Glad many of you are enjoying these muffins. There are some truly great insights above. By the way, you can use vegetable oil as a substitute. I think olive oil may give it an odd taste.

these were amazing. I added a little more vanilla and used almonds instead of walnuts (it was what I had . . . ) and they turned out absolutely delicious. My roommates ate them all in two days. :)

My daughter and I made these together. They were truly fantastic! I added the optional vanilla but left out the nuts (we have a food allergy). I topped each muffin completely with the streusel because we love sweets. I altered the temp to 325 degrees and cooked for 33 minutes. I give these 5 out of 5 stars!Thanks :)

This is the best banana muffin recipe! So easy to follow and you can adjust to your own taste! We only had 2 banana's so we added 1 Roma Apple! They were perfect! Great for a quick healthy breakfast for kids running off to school!
